Yam & Pumpkin Seed Quesadilla

Be prepared to have your mind blown.  

Ingredients:

  • Roasted and mashed yams
  • Pepper jack cheese
  • Green onions
  • Roasted pumpkin seeds
  • Salsa

Instructions:

  1. Roast your yam in the oven (or microwave it for faster consumption)
  2. Mash the cooked yam 
  3. Add the cheese, green onion, and pumpkin seeds to the mashed mixture - it's best to do it when the yam is still hot so that the cheese gets all melty and yummy
  4. Spread the mixture over a tortilla, add another on top (for a large quesadilla) or simply fold it in half (for a smaller quesadilla)
  5. Fry it on medium heat in frying pan 
  6. Serve with salsa
